Apple’s and frozen pie

A few weeks ago on Facebook there was a statement thrown out saying ‘man I wish I could freeze apples’ WELL for about 4 years now I have been doing just that. I tryied to explain how I do it and then thought it might be easier to write about it!:) SOO here I go!

After you purchased (or pick them) and you have them ready to go.. wash and then start peeling them (I got this peeler from my mom when I got married -but its from Pamper Chef)

I then use a big bowl and throw them in there…

All the peel’s and cores i throw away (or my kids eat them and call them snakes!:)

Then I gather my supplies.. for either pies or apple sauce.. I am making two pies today… one to freeze for Thanksgiving (one week from today) and one for tomorrow.

Since I am making two I will double my recipe .. I have done up to 5 pies at one time… this way.. SOO much easier to get a bulk done instead of doing it every time you want a pie…

After I measure I pour in and then shake up the seasonings…

After I finish (or one of the cutest kids ever!!) I lay my pie pan out and line it with foil.. enough to cover the ENTIRE pie with one piece.. this will gave you when you take it out of the freezer later

Then I place the ENTIRE pan and pie mix into the freezer for about 24 hours.. this will make the pie the shape of the pan and when it is frozen i can place it in a ziploc bag and then when i am ready to cook it i just take the foil off and line the pie with crust (bottom and top)  and the pie mixture fits perfect.

This makes it SOO easy!!

Apple Pie

this recipe below makes ONE pie in a regular pie pan..

3lbs Apple’s (any kind)

1/4 cup flour

1 tsp cinnamon 

1/2 tsp nutmeg

3/4 brown & white sugar mixture

“mix all above except apples.

Spray pie pan add crust

Mix the ‘mix’ into the apples, pour into pan.

Cut up 1/2 stick of butter (into chunks) lay around pie

Add top crust.. make 4 slits

rub egg white on hands then rub onto pie top

SPRINKLE with sugar

BAKE at 250 for 2.5 3 hours 

(YES this seems low heat and a long time but thats the key!!)

Even if you bring it straight from the freezer the time and heat are the same!!

Homemade Brownies!

We all love pinterest.. or rather we love to hate it:) A LONG time ago I saw this recipe for homemade brownies and since we have been striving to eat box items that are 5 or less  we were on the hunt for a yummy brownie mix. Insert Pinterest!!!!!

I then gathered all the supplies and began mixing up this yummy dessert…

DSC03786I did add chocolate chips to my batter..(I would not recommend this because where the chips were it seemed uncooked)..

Other than adding in the chips i followed the recipe exact! IT WAS gone!! That same night! SOO I am guess it was a huge hit!!

The Next (4 times) time I made this I double the recipe.. And I am thinking about substituting oil for applesauce..I’ve done it before with other things so I think its time to try it on this one.. I will update when I do that!

Other than those things I would say this was a HUGE hit AND KEEPER! for the Kent family! And since my husband is a chocolate nerd I have decided to make up some dry mix bags of this for quick mixing..(kind of like the box only without any crazy yucky stuff!!)

I currently have a double batch on my stove 3/4’s gone!:) Let me know how you like it!!

Ingredients:*
1 Cup Sugar
1/2 Cup Flour
1/3 Cup Cocoa
1/4 teaspoon Salt
1/4 teaspoon Baking Powder

Mix all these ingredients together with a whisk and dump them into a zipper bag.  On the bag, add the following instructions:

Add:  2 Eggs, 1/2 Cup Vegetable Oil, 1 teaspoon Vanilla.  Bake @ 350 degrees for 20-25 minutes in a 9 x 9 pan.

New Bread recipe! YUMMY!

As part of my goals i am to make a new bread recipe every week.. Last night i made a very easy yummy bread! It was a little wholewheat so that counts right??

I got the original recipe from here at moneysavingmom.com.. although i did change it some for our taste.. and since we still do not have an oven we went ahead and used the machine instead of taking it out.. (IT did rise FULL to the top..so be aware!)

Homemade Wheat Bread

  • 1 cup warm water (110-115 degrees F.)
  • 1 tablespoon milk
  • 2 tablespoons oil
  • 4 tablespoons brown sugar
  • 1 teaspoon salt
  • 1 cup whole-wheat flour
  • 2 cups bread flour
  • 2 teaspoons dry yeast

Put all ingredients in the bread machine in the order listed.

Put on wheat bread and LIGHT crust.. and walk AWAY~:) it was soo good!

Whole Chicken experience

YEP! I live in the era where you NEVER have to buy a whole chicken, clean it and cook it.. And i have successfully gone 29 years without doing so.. BUT as of late I have noticed my ‘meat’ bill seems to be soo high.. (i only buy greenwise chicken from Publix’s) soo in an effort to lower that cost i began seeking out advice! My dear Friend Shana!! Told me how she cooks a whole chicken in the crock pot.. DIDN’T seem that hard!!

SOO off to Publix for their Greenwise whole chicken.. ($6.93 later) i had me a GROSS, raw chicken.. (Superman doubted i would ever do anything with it…)

All i put in the crock pot was 8 ozs of chicken broth and the chicken.. ( i did season the top with salt and pepper) After 8 hours (or so:) the chicken just fell off the bone…

I was left with 3.5 cups of chicken..for me this was awesome.. I pkg them into one cup bags and then froze them.. will be awesome for taco’s or enchiladas or soups! Excited about making this part of our bi-weekly routine!!

No bake Granola bars.. SUCCESS!

One of my monthly goals was to try a new recipe.. I decided to take it a bit more and I am doing a snack and a meal .. SO for the snack i choose No bake Granola bars.. (got the recipe here… http://moneysavingmom.com/2012/09/chewy-no-bake-granola-bars.html  )

I made it part of school so the boys helped..

(due to not reading the entire directions first.. i added the choco chips BEFORE i was supposed to..thus the more choco look)

The only part that had to be “cooked” was the honey and brown sugar..

Needless to say I quickly wrapped each one (after they cooled of course) in wax paper in hopes i would not devor them ALL!:) NO more store bought granola for us.. these will be made again!

Chewy No-Bake Granola Bars

Makes 24 bars (9″x13″ pan)

INGREDIENTS:

  • 2 ½ cups Rice Krispies (if you want to make these healthier, you can use plain puffed rice cereal)
  • 1 ¾ cups quick oats (regular rolled oats work too)
  • ¼ cup wheat germ (or ground flax seed, wheat bran, or additional oats)
  • ½ cup additional mix-in ingredients, optional (i.e. shredded coconut, chopped nuts, raisins or other dried fruit, sesame or sunflower seeds, etc.)
  • ½ cup honey
  • ½ cup brown sugar (or sucanat)
  • ¼ teaspoon salt
  • 2/3 cup peanut butter
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips

DIRECTIONS:

  • Combine first 4 dry ingredients in a bowl.
  • In a saucepan, mix the honey, brown sugar and salt. Over medium-low heat, stir until the mixture comes to a complete boil for 30-60 seconds.
  • Remove from heat and stir in the peanut butter and vanilla until smooth.
  • Pour over the dry ingredients and mix well.
  • Let cool for 5-10 minutes before mixing in the chocolate chips.
  • Press into a greased 9×13 pan and let cool before cutting into bars.

These freeze well!!

I did 1/2 the recipe (for my Family of 5, there was PENTY!!!!!!!) I served it with grits and OJ!:) All three kids and Superman LOVED it! SOOO id say success! The picture makes it look soupy.. it wasnt.. it was more of a solid! BUT ooh so yummy- stated “taco”!!!

Slow Cooker Sausage Breakfast Casserole

Ingredients

  • 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
    1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
    2 cup (8 ounces) shredded mozzarella cheese
    1/2 cup (2 ounces) shredded Parmesan cheese
    1/2 cup julienne cut sun dried tomatoes packed in oil, drained (did not use)
    6 green onions, sliced (did not use.. superman isnt a fan of Onions)
    12 eggs
    1/2 cups milk
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper

Directions

1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.

2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.

4. Pour evenly over potato-sausage mixture.

5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set. (IF making only 1/2 it will take 2 hours on HIGH)

Cook’s Tip: Substitute 1 cup chopped fresh tomato for sun dried tomatoes, if desired.

Substitute 1 pkg. Regular Flavor Jimmy Dean® Pork Sausage Roll, cooked, crumbled for Jimmy Dean® Hearty Original Sausage Crumbles.

Yield:

12 servings (about 1 cup each)

*** REMEMBER this makes a BUNCH!!!!!!!!!!!!!
