Menu Plan for July 10-17 (yes mid week:)

since we are really boring when it comes to this meal we always have the same

Whole Chicken experience

YEP! I live in the era where you NEVER have to buy a whole chicken, clean it and cook it.. And i have successfully gone 29 years without doing so.. BUT as of late I have noticed my ‘meat’ bill seems to be soo high.. (i only buy greenwise chicken from Publix’s) soo in an effort to lower that cost i began seeking out advice! My dear Friend Shana!! Told me how she cooks a whole chicken in the crock pot.. DIDN’T seem that hard!!

SOO off to Publix for their Greenwise whole chicken.. ($6.93 later) i had me a GROSS, raw chicken.. (Superman doubted i would ever do anything with it…)

All i put in the crock pot was 8 ozs of chicken broth and the chicken.. ( i did season the top with salt and pepper) After 8 hours (or so:) the chicken just fell off the bone…

I was left with 3.5 cups of chicken..for me this was awesome.. I pkg them into one cup bags and then froze them.. will be awesome for taco’s or enchiladas or soups! Excited about making this part of our bi-weekly routine!!

Freezer meal to the rescue…

This week has been full of sickness around here.. one kid or another has had the yuckies.. Well today it went full throttle.. “baby” seems to be on the tail end, “taco” right smack in the middle and “Brother” the beginning stages… SOO off to the doctors we went.. and 1.5 hours later we no nothing than its the croup and Baby has an ear infection… (first one of my kiddo’s to get this:(BOO!) I didnt even make it home before two were asleep.. After a 3 hour nap.. they all were soo sleep still.. SOO in went a special treat of Veggies tales!

Baby cried the entire afternoon..well about every 20 or 30 minutes… at 5:00 I REALIZED it was 5:00 and soo thankfull for the Freezer meal i had thrown in the crockpot before the doctors appt this morning…. Due to my crazy day i would have opted to take out or another form of food…Such a proud moment to be able to have a home cooked meal without the stress..

SOO incase you were not already aware i LOVE my freezer cooking swap group i am part of.. FOR DAYS LIKE TODAY! Now i am off to lay on the couch by the fire and my Superman.. SOO i can be ready for anything that comes at me during the night..(last night between the two boys i was up 9 times)-praying for a more restful night!:)

If you are able to just do one freezer meal a week.. (maybe double a recipe you are already making) it might be worth it.. My goal of eating out once a week was not broken because of sickness or tiredness (at least not this time:) but instead we kept right on because there was a ‘pre-plan’

Whats for Dinner?? Yummy Goodness!

So part of my goals is to try a new recipe each week..tonight was the first one:) Thank you Pinterest!

I did 1/2 the recipe (for my Family of 5, there was PENTY!!!!!!!) I served it with grits and OJ!:) All three kids and Superman LOVED it! SOOO id say success! The picture makes it look soupy.. it wasnt.. it was more of a solid! BUT ooh so yummy- stated “taco”!!!

Slow Cooker Sausage Breakfast Casserole


  • 1 pkg. (26-32 ounces) frozen shredded hash brown potatoes
    1 pkg. Jimmy Dean® Hearty Original Sausage Crumbles
    2 cup (8 ounces) shredded mozzarella cheese
    1/2 cup (2 ounces) shredded Parmesan cheese
    1/2 cup julienne cut sun dried tomatoes packed in oil, drained (did not use)
    6 green onions, sliced (did not use.. superman isnt a fan of Onions)
    12 eggs
    1/2 cups milk
    1/2 teaspoon salt
    1/4 teaspoon ground black pepper


1. Spray a 6 quart slow cooker with cooking spray. Layer 1/2 of the potatoes on the bottom of slow cooker.

2. Top with half of the sausage, mozzarella and Parmesan cheese, sun dried tomatoes and green onion. Repeat layering.

3. Beat eggs, milk salt and pepper in large bowl with a wire whisk until well blended.

4. Pour evenly over potato-sausage mixture.

5. Cook on low setting for 8 hours or on high setting for 4 hours or until eggs are set. (IF making only 1/2 it will take 2 hours on HIGH)

Cook’s Tip: Substitute 1 cup chopped fresh tomato for sun dried tomatoes, if desired.

Substitute 1 pkg. Regular Flavor Jimmy Dean® Pork Sausage Roll, cooked, crumbled for Jimmy Dean® Hearty Original Sausage Crumbles.


12 servings (about 1 cup each)
